Scrolling through Pinterest, I found a recipe that caught my eye, and then, as these Pinterest inspired discoveries often go, turned it into a bit of a Pinterest Fail. On this occasion, however, I was more than happy with my failure as it led to the creation of these mouthwatering midweek treats!
I was trying to make these Zucchini Balls, as I said, failed miserably, maybe I'll try it again sometime but rather than fiddling around any longer with them, I decided to cut my losses and play around with the recipe a little to create some fritters instead!
Ingredients (Serves Two)
1 Large Zucchini (Grated or Spiralled, I used my Zoodle Maker)
1 Cup of Panko Crumbs
A Generous handful of Parsley, finely chopped
A handful of grated cheese
Salt & Pepper
1. Throw all the ingredients into a large bowl and make sure it is combined well.
2. Take out about two dessert spoons of mixture and flatten it into a round fritter.
3. Lightly fry your fritters over a medium-high heat until golden brown
4. Remove from heat, and place on some paper towel to soak any excess oil.
It's that easy! They are also very versatile, next time I think I will add some chopped onion and maybe replace some of the zucchini with carrot. If you try them out let me know how you go!
